Kugel is a national Jewish dish that arose from a religious prohibition to light a fire and cook food on Shabbat. Initially, it was baked in a special form, which was placed overnight in an enveloping oven and by morning received a finished dish. Over time, the recipe has been modernized and improved. Currently, there are countless recipes for various kugels based on bread, potatoes, vermicelli and fruits with various additives – sour cream, milk, eggs and sugar.
We offer you a recipe for Jerusalem sweet kugel based on vermicelli. The main taste of the product is given by black pepper and caramel. And in this unusual flavor combination, the incredible appeal of the dish.
For the recipe, you will need medium-sized durum wheat pasta. Dried fruits can be chosen according to taste. For flavor, vanilla and cinnamon can be added to the kugel.
Ingredients:
- Pasta (curls) – 300 g.
- Eggs – 3 pcs.
- Dried bananas – 3 g.
- Raisins – 5 g.
- Candied fruits – 3 g.
- Dates – 2 pcs.
- Vegetable oil – 40 ml.
- Honey – 60 g.
- Black pepper – ¾-1 tsp
- Salt, cinnamon, vanillin – ¾ – 1 tsp.
- Sugar for caramel – 85 g.
How to cook:
1. Crack the eggs into a bowl. Add black pepper, cinnamon, vanilla, honey and vegetable oil.
2. Beat the mixture with a blender until foamy.
3. Boil pasta in salted water for 4 minutes from the moment of boiling. Drain in a colander, rinse and transfer to a bowl. Add candied fruits, dried bananas, raisins and dates cut into small pieces.
4. Mix the mass until the components are evenly distributed.
5. Pour sugar into a frying pan with a removable handle.
6. Heat it over low heat until melted.
In no case do not stir the sugar, just slowly tilt the pan in different directions.
7. Put the pasta mass in caramel, smooth the mass.
8. Cover the pan with foil and bake at 180 degrees in the oven for 50 minutes.
9. Remove foil and continue cooking 15 minutes.
10. Turn the finished kugel onto a serving plate.
11. Sprinkle pastries with powdered sugar, decorate with bright berries and serve. Hearty kugel with an unusual taste can be served for breakfast or tea.
