Cucumbers for the winter “Aunt Galya” always turn out to be successful, as the jars “stand” perfectly all winter, and the lids on them never swell. To taste, cucumbers are original, tasty and crispy.
To prepare them, it is worth buying vegetables that are not too large in size so that they can easily fit in a jar. If possible, then it is better to buy homemade vegetables, as they not only taste better, but also do not contain harmful components.
Store the finished closure in a cool and dark place. For this, the pantry or cellar is best suited. Since cucumbers are poured with boiling water and only then with marinade, they do not need to be sterilized. If this procedure is a prerequisite for you, then you can sterilize them, but not more than 5-7 minutes, otherwise the vegetables will not come out crispy. In general, the time-based sterilization process should take a little time, so you can immediately clog the jars after the vegetables change color during sterilization.
Ingredients:
- Cucumbers – 1 kg.
- Horseradish root – 10 g.
- Dill – 1 bunch.
- Garlic – 1 clove per jar.
- Bay leaf – 1 pc. to the bank.
- Peppercorns – 3-5 pcs. to the bank.
- Sugar – 2 tbsp. l.
- Salt – 1 tbsp. l.
- Vinegar 9% – 1 tbsp. l. to the bank.
- Water – 1 l.
How to cook:
1. Wash the glass jar with a sponge and baking soda. Rinse it very thoroughly with clean water. Now send the jar to the microwave for 1 minute, set the power to maximum. Put dill, bay leaf, garlic, peppercorns, peeled horseradish root on the bottom of the prepared jar.
2. Now wash the cucumbers very carefully, put them tightly in a jar.
3. Fill them with boiling water, cover the jar with a lid and leave it for 15 minutes.
4. Prepare the marinade, for this, pour water into the bucket. Add salt and sugar. Bring the marinade to a boil.
5. Pour in vinegar 9%, mix.
6. Drain the boiling water from the cucumbers and fill them with the prepared marinade.
7. Sterilize the jar of cucumbers for 5-7 minutes. After that, screw it with a metal cap.
