You can cook cucumbers in tomato sauce in about 1 hour. It takes about 30 minutes to prepare the tomato sauce and about 20 minutes to pasteurize. The preparation process is no more than 10 minutes. Cucumbers for this recipe will suit any size. The main thing is that it is convenient to put them in a jar. And so, if you are ready, then we begin to prepare cucumbers for the winter.
Ingredients:
For 2 cans of 1 liter:
- Tomatoes – 2 kg.
- Salt – 3 tsp
- Water – 50-70 ml.
- White sugar – 50 g.
- Parsley, dill – 1 bunch.
- Garlic – 3-4 large cloves.
- Spices (any mix for chicken, potatoes) – 3 tsp.
- Cucumbers (medium size) – 10 pcs.
- Vinegar 9% – 2 tbsp. l.
How to cook:
1. Wash the tomatoes well so that no earth or dust remains. Cut them into slices so that the tomato cooks faster.
2. Sprinkle coarse salt immediately.
3. And add sugar.
Depending on your preference, you can change the ratio of sugar and salt. Or even add pepper if you like a spicier sauce.
4. Pour chopped fresh herbs into the bowl: dill and parsley.
5. Peel the garlic, pass through a press into a bowl.
6. Add spices. It is better if it is some kind of mix containing red ground pepper, paprika. Pour in water and boil the tomato for about 35-40 minutes.
7. Sterilize jars in any way. Soak cucumbers in cold water for 2-3 hours. Then put them in prepared jars.
8. When the vegetables are soft, let cool the contents of the bowl, and grind to a sauce.
9. Pour the tomato sauce into the cucumber jars.
10. Add a tablespoon of regular 9% vinegar to each jar.
11. It remains to carry out the pasteurization process in order to be sure that the seamings will stand until winter. In a large pot of water, lay a towel on the bottom and put the jars on it, without twisting their lids when the water boils. Boil jars for 20-40 minutes. After that, twist with sterile caps and put in a dark place, turning upside down.
