Cupcake “Luxury” is an airy, soft, fragrant pastry worthy of its name. Indeed, the composition of the dough includes appetizing pieces of juicy pear, delicate almond petals, dark chocolate and cognac, which gives the pastries a delicious aroma.

In a word, the Luxurious cupcake is a temptation that no one can resist. But, if you plan to treat children with pastries, cognac should be excluded from the composition of the ingredients.

Ingredients:

  • Wheat flour – 450 g.
  • Sugar – 200 g.
  • Baking powder – 1.5 tsp.
  • Water – 250 ml.
  • Refined sunflower oil – 150 ml.
  • Liquid honey – 2 tbsp. l.
  • Pear – 250-300 g.
  • Almond flakes – 40-50 g.
  • Dark chocolate (without additives) – 50 g.
  • Cognac – 1 tbsp. l.
  • Breadcrumbs for sprinkling molds – 1 tbsp. l.
  • Sunflower oil for lubrication of the form – 1 tsp.

How to cook:

1. Put a saucepan with 0.5 liters of water on the fire. Let the water boil.

Pour water into a glass, enamel or ceramic bowl – 250 ml.

2. Pour in the sugar.

3. Add honey.

4. Pour in sunflower oil.

5. Place the bowl over a water bath (pot of boiling water). Stirring constantly, heat the mixture until the honey and sugar are completely dissolved.

6. Remove the bowl from the water bath and immediately pour in the cognac. Stir.

7. In another bowl, sift the flour along with the baking powder.

8. Pour the sifted flour into the bowl with the sugar-butter mixture.

9. Thoroughly mix all the ingredients with a mixer into a homogeneous, lump-free mass. Evaluate the resulting dough: it should resemble thick sour cream in consistency.

10. Pour in the almond flakes. Stir.

11. Pears need to be peeled and the pits removed. Cut the pulp into cubes with a side of about 1.2 – 1.5 cm. Place the pieces of pears in a bowl with dough.

12. Chop the dark chocolate with a knife into large crumbs and pour into the dough. Mix all ingredients thoroughly.

13. Grease the cupcake form with sunflower oil and sprinkle with breadcrumbs.

Put the dough into the form. Smooth the surface with a spoon.

14. Preheat the oven to 170⁰ C. Put the mold with the dough into the oven and bake the cake for 90 minutes.

15. Remove the pan from the oven and carefully remove the Luxury Cake onto a flat dish or wire rack.

16. Cut the cooled cake into portions and serve. You can sprinkle with powdered sugar if you like.
