Ingredients:
- Warm water – 200 g.
- Wheat flour – 450 g.
- Raw yeast – 15 g.
- Vegetable oil in the dough – 40 g + for frying.
- Sugar – 0.5 tbsp. l.
- Champignons – 180 g.
- Onion – 40 g.
- Salt – to taste.
- Black ground pepper – to taste.
How to cook:
1. Pour warm water into a suitable bowl, crumble raw yeast into it and stir so that the yeast is completely dissolved and begins to work.
2. Pour in sugar and salt. Stir until the salt and sugar crystals melt. Yeast works great with sugar, in sweet water the yeast rises well.
3. Pour in vegetable oil – with it the dough will be elastic and softer.
4. Pour the sifted flour in parts and knead the yeast dough.
Do not overdo it with flour, so that the pies do not turn out hard.
5. Knead the dough and roll it into a soft ball.
The dough may stick a little to your hands – this is normal, but do not add flour. The less flour, the softer the pies.
Cover the bowl with the dough with a towel and put it in a warm, draft-free place for 40 minutes.
6. In the meantime, get on with the filling. Cut the peeled mushrooms into small cubes.
7. Do the same with onions – cut the onions into cubes for the filling.
8. Pour a couple of tablespoons of oil into the pan, add the mushrooms, fry for a couple of minutes, then add the onion.
9. Fry mushrooms with onions for 5-6 minutes over medium heat, stir, then add salt and black pepper to taste.
10. Now the dough is ready – it has grown 3 times. Mix it up and you can make pies.
11. Divide the dough into balls slightly larger than an egg. Sprinkle the board with flour, lay out one ball of dough.
12. Press the dough with the palm of your hand and put about 1 tbsp in the center. l. mushroom stuffing.
13. Pinch the edges of the dough, blind the pie. Thus blind all the pies from the dough.
14. Pour 100 grams of vegetable oil into the pan, heat it over medium heat, put the pies seam down and start frying.
15. After 3 minutes, turn over – the pies have become ruddy. Fry on the reverse side for the same amount of time, keep an eye on it, you may have to get pies earlier.
Put the finished pies on a plate, cool a little and serve warm to the table. The pies are fluffy, soft and crispy, and you just want to eat them right away.
Bon appetit!
