Salad “Autumn” has such a name due to the fact that it is prepared from seasonal vegetables. To taste, it turns out to be quite tender, original and unique. Due to the fact that neither sausage nor meat is added to it, it is still suitable for those who do not eat these products.
To prepare this salad, you should definitely purchase high-quality carrots, ideally, so that it is homemade, it tastes better and is brighter in color than store-bought. Canned zucchini should be added to the salad, but they should not be sour. By the way, it is better to boil potatoes and carrots in advance for making a salad, just like chicken eggs, so that you don’t waste time on this procedure later.
Season salad “Autumn” should be mayonnaise or sour cream. And, if yogurt is acceptable to you, then feel free to use it.
Ingredients:
- Boiled potatoes – 1 pc.
- Boiled carrots – 0.5 pcs. large or 1 pc. average.
- Chicken eggs – 2 pcs.
- Mayonnaise – 0.5-1 tbsp. l.
- Canned zucchini – a few pieces (you can replace this ingredient with pickled cucumbers).
How to cook:
1. So, first of all, if you have fresh vegetables, wash them very thoroughly. Place carrots and potatoes in a bowl. Pour them with clean water, add a pinch of salt and cook for 20-30 minutes after the water boils completely. Be sure to boil chicken eggs in a separate container, in time for 7 minutes. Now peel the boiled vegetables. Cut boiled carrots and zucchini into small cubes.
2. Cut chicken eggs and potatoes in the same way as the previous ingredients.
3. Put all these chopped foods in a deep bowl or regular saucepan.
4. Add to them the sauce on which you decide to opt for. I added mayonnaise to the salad, which I prepared myself.
5. Mix the Autumn salad well with a regular spoon. Send it to the refrigerator for 20 minutes. So all the vegetables will be the same temperature.
Now boldly serve the finished salad to the table. You can decorate it with fresh herbs on top.
