To prepare a very tasty and fragrant sweet pepper lecho with zucchini without sterilization, we will prepare the necessary products from the list. Cooking this delicious vegetable appetizer is very easy and, most importantly, quickly. Even a novice hostess will cope.

We will also pre-prepare jars for vegetable snacks: wash them in hot water with baking soda, rinse with clean cool water and sterilize in any way convenient for you. Boil the lids for 1-2 minutes in a saucepan and leave in the same place until use.

Ingredients:

For 2 cans 650 ml:

  • Sweet pepper – 450 g.
  • Zucchini – 450 g.
  • Bulb onion (large) – 1 pc.
  • Fresh red tomatoes – 800 g.
  • Vegetable oil – 4 tbsp. l.
  • Salt – 2 tsp.
  • Sugar – 4 tsp
  • Vinegar 9% – 2 tsp
  • A mixture of peppercorns – optional.

Cooking time: 1 hour 20 minutes. Servings Per Container: 6-8.

How to cook:

1. Wash vegetables in clean water, clean and weigh. For lecho, it is advisable to choose young zucchini with tender pulp without large seeds inside. Pepper is also better to take quite ripe and fleshy.

2. Grind red ripe tomatoes in a food processor or pass through a meat grinder, after freeing them from the skin. To do this, we cut the tomatoes in the upper part with a sharp knife crosswise and pour boiling water over them. After 15 minutes, drain the water and the skin is very easily removed.

3. Pepper and zucchini cut into small cubes.

4. In a saucepan, heat up the odorless vegetable oil and pour the diced onion. Simmer over medium heat until translucent, about 2-3 minutes.

5. Pour in the tomato juice, bring to a boil and cook for 5 minutes.

6. Pour zucchini into a saucepan and cook over medium heat for 5-7 minutes, stirring with a spoon so that nothing burns.

7. Then add sweet pepper cubes, salt, sugar, a few peppercorns (if you like) to the zucchini and continue to cook lecho for another 6-8 minutes.

Avoid vigorous boiling – heating should be medium.

At the end, pour in the vinegar, let the salad boil and turn off the stove.

8. Immediately fill carefully prepared jars with hot lecho and cork with lids.

9. We wrap the jars of salad with a thick towel and leave to cool on the table.
