Before the zucchini season is over, it’s time to cook one of the most popular dishes from this particular vegetable – zucchini caviar. There are a huge number of options on how to do it.
One of the most famous ways is using mayonnaise. Zucchini caviar with it turns out very tasty. It is thanks to the addition of tomato paste and mayonnaise that this vegetable appetizer turns out to be delicate in taste, and onions and carrots, which are also part of the dish, add piquancy and sweetness at the same time.
Such zucchini caviar can be rolled up for the winter, or you can immediately serve it to the table after it has cooled down. Zucchini for preparing this kind of caviar is better to buy young, without large seeds, and mayonnaise with the highest percentage of fat.
Ingredients:
- Zucchini (medium size) – 2 pcs.
- Carrot (small) – 1 pc.
- Onion – 1 pc.
- Mayonnaise (low fat) – 30 g.
- Tomato paste – 30 g.
- Salt – 3-4 g.
- Ground pepper – 3-4 g.
- Sunflower oil – 60 g.
How to cook:
1. Prepare all ingredients according to the list. Wash all vegetables well, peel onions and carrots. Zucchini can not be peeled, as the skin of young fruits is very thin and soft.
After that, cut the zucchini into not too small cubes.
2. Onion cut into smaller cubes.
3. Chop the carrots into cubes the same size as the zucchini.
4. Next, take a frying pan that will fit all the chopped vegetables, pour vegetable oil into it and put all the chopped ingredients. Add the necessary spices.
5. Then add the tomato paste to the vegetables. Mix all the ingredients and simmer over medium, moderate heat for about fifteen minutes.
6. When fifteen minutes have passed, take a convenient saucepan and transfer the contents of the pan into it.
Take an immersion blender and use it to chop the stewed vegetables.
7. After the contents of the pan have the appearance and consistency of puree, add the required amount of mayonnaise and mix.
8. Simmer such a homogeneous mass over low heat for only five minutes.
Caviar from zucchini can be served immediately on the table, put in a small bowl, or you can fill sterile jars and cork them with lids. Thus, zucchini caviar will please you not only in summer, but also in cold winter.
