Fragrant, soft and airy bagels with condensed milk will cook today. We offer a recipe for rich pastries, and for the filling we will take boiled condensed milk. You can use thick jam or jam. Your children will especially appreciate these bagels, because they love condensed milk.
Ingredients:
- Wheat flour of the highest grade – 500 g.
- Warm milk – 150 ml.
- Warm water – 100 ml.
- Dry active yeast – 2.5 tsp.
- Sugar – 120 g.
- Salt – 5 g.
- Butter – 70 g.
- Chicken egg (large) – 1 pc.
- Vegetable oil – 2-3 tbsp. l.
- Boiled condensed milk – to taste.
How to cook:
1. Let’s start by activating the yeast. To do this, pour warm milk and water into a bowl, add yeast, a few teaspoons of sugar from the total amount and a handful of wheat flour. Stir the milk mixture and leave for 5-10 minutes.
2. A frothy cap appeared on the surface of the dough, which means proceed to the preparation of dough for bagels.
3. For the dough, combine wheat flour, dough, sugar and the protein of one large egg in a large container. Leave the yolk to grease the bagels. Add a pinch of salt and knead the dough.
To knead this dough, you can use a food processor with a special hook attachment. You can also knead the dough by hand.
Add soft butter to the dough when it already has a uniform shape. Grease the sides of the bowl with vegetable oil and cover the proofing dough.
4. The dough will increase in volume in 40-50 minutes, which means you can form bagels with condensed milk.
5. Divide the finished dough into two parts and roll each part into a thin layer on the work surface. You can dust the surface with flour or starch so that the dough does not stick. Cut the prepared dough into sectors.
6. Spread boiled condensed milk on the edges of each sector.
7. Twist the bagels, slightly pulling the dough, fasten the edges tightly.
8. The shape of bagels can be varied, for example, such a curly one as in the photo. Use whatever shape of bagels you like.
9. Transfer the bagels blanks to a baking sheet with parchment, grease with egg yolk mixed with a spoonful of water. Cover the blanks with a bag and leave for 20-30 minutes to proof.
10. In a preheated oven to 180 degrees, bake bagels with condensed milk for 15-20 minutes.
To prevent the bottom of the bagels from burning, I recommend placing a refractory container with water on the bottom of the oven.
11. As soon as you take the bagels out of the oven, grease the surface with a sweet solution, after which the bagels become even tastier and softer. And for this solution, simply mix 2-3 tablespoons of sugar and boiling water (up to 100 ml).
Serve bagels with condensed milk to the table with tea or milk, you can with kefir.
