Initially, pies were called products made from yeast dough. However, over time, they began to call pies, and whites, and cheesecakes, and samsa. Fried potato pies are also named incorrectly because they are made from unleavened kefir dough. However, this does not make them less loved and popular.
Ingredients:
- Egg – 1 pc.
- Kefir – 170 ml.
- Soda – 1/3 tsp
- Salt – 1/3 tsp.
- Flour – 400 g.
- Vegetable oil – for frying.
For filling:
- Potato – 250 g.
- Onion – 1 pc.
- Butter – 30 g.
- Vegetable oil (for frying) – 3 tbsp. l.
- Salt – 1 tsp
- Pepper – to taste.
Cooking time: 1.5 hours. Servings Per Container: 20.
How to cook:
1. Wash, peel and boil potatoes in salted water until tender. Then pour 100 ml of the decoction into a cup. Pour out the rest of the liquid. Mash potatoes. Pour a little broth in small portions to make the puree soft and juicy.
2. Peel and cut the onion into small cubes. Fry in vegetable oil until golden brown. Add along with butter to mashed potatoes. Salt, pepper. Add butter.
3. Stir. The filling for fried pies with potatoes is ready.
4. The dough is prepared on kefir, but you can replace it with yoghurt, curdled milk or sour cream. Mix with egg.
5. Gradually add flour. When the dough has absorbed most of the flour, add salt and soda.
6. Quickly knead a soft, non-sticky dough.
It is not necessary to knead for a long time so that the carbon dioxide formed in it does not evaporate.
7. Divide the dough into 2 parts. Then divide each into 10 servings.
8. Roll a ball out of each and put it under a towel so that it does not wrap. On a table sprinkled with flour, roll out a ball in the form of a round, thin cake with a diameter of about 10 cm. Place one spoonful of filling in the center.
9. Blind a boat pie. Pinch the edges tightly.
10. When all the pies are formed, fry them over medium heat in vegetable oil on both sides. Put the products on the pan first with the seam down. Then, when one side is browned, carefully flip over and fry the other side.
Put the finished pies with potatoes on a paper towel to remove excess fat. Serve hot.
