It is impossible to imagine a festive and everyday table without herring, which is loved by adults and children. Fish cooked at home is preferable to a purchased product. After all, you can prepare a perfectly balanced dish according to your taste. We offer you one of the options for salting herring in a jar in pieces. The fish can already be served an hour after cooking.
For the recipe, choose a fresh-frozen herring with an intact skin. It is best to defrost fish slowly, at low temperatures (in the refrigerator). Do not use iodized or fine salt for salting. The proportions of spices can be changed.
Ingredients:
- Large herring – 1 pc.
- Coarse rock salt – 30 g.
- Sugar – 10 g.
- Purple onion – 1 pc.
- Vinegar 9% – 1 tbsp. l.
- Suneli hops – 0.5 tsp
- Allspice – 2 peas.
- Sage – 2 g.
- Dried dill – 2 g.
- Bay leaf – 2 pcs.
- Juniper – 4-5 berries.
How to cook:
1. Put salt, sugar and spices into a saucepan for preparing brine.
2. Pour the contents of the pan with 0.5 liters of cold water, bring the brine to a boil. Cool under the lid.
3. Remove the head and tail of the herring, remove the fins with special scissors.
4. Gut the fish, separate the milk or caviar. Wipe the belly thoroughly with a paper towel.
5. Remove a thin skin, mill the herring.
7. Remove the onion peel, chop the onion into thin rings.
8. Cut the herring into pieces 1.5 cm wide. Place slices of herring on the bottom of a clean, dry jar.
9. Lay onion rings on top. Alternate layers of herring and onion until the end of the products.
10. Pour the contents of the jar with cooled brine through a sieve.
11. Add vinegar. Cover the jar with a lid and leave to marinate for one to an hour and a half.
12. Put the herring on a serving plate. Decorate the appetizer with onion rings, parsley leaves, add lemon slices. Lightly drizzle the dish with olive or vegetable oil and serve.
Herring has a great salty taste, emphasized by spices and a delicate structure. An appetizer can be served at the New Year’s table or at any celebration.
