2. Pour the contents of the pan with 0.5 liters of cold water, bring the brine to a boil. Cool under the lid.

3. Remove the head and tail of the herring, remove the fins with special scissors.

4. Gut the fish, separate the milk or caviar. Wipe the belly thoroughly with a paper towel.

5. Remove a thin skin, mill the herring.

7. Remove the onion peel, chop the onion into thin rings.

8. Cut the herring into pieces 1.5 cm wide. Place slices of herring on the bottom of a clean, dry jar.
