Kutaby with herbs and cottage cheese is a tasty and satisfying dish for the whole family. Flatbreads made from unleavened dough are fried in a dry frying pan, and they turn out soft and tender. There are several cooking secrets that we will tell you today.
For the filling you will need cottage cheese and herbs, we suggest taking dill and parsley. Kutabs are an excellent substitute for classic chebureks and pies. And the curd filling is suitable for those who do not eat meat.
Ingredients:
For test:
- Wheat flour – 600 g.
- Water – 230 g.
- Vegetable oil – 50 g.
- Salt – 1 tsp
- Butter – to taste.
For filling:
- Cottage cheese – 250 g.
- Dill, parsley – 5 g.
- Salt, black pepper – to taste.
How to cook:
1. For the dough, prepare a deep bowl, pour water into it and add salt, mix until the crystals dissolve.
2. Pour vegetable oil into the water, it will give the dough elasticity.
3. Pour the sifted flour into the liquid mass, first half, and then add a little more, gradually kneading the dough.
4. Roll the dough into a tight ball, leave to rest for 15 minutes, covered with a clean and dry cotton towel.
5. Then divide the dough into 6-7 approximately identical balls – they will make kutab.
6. For the filling, mix cottage cheese and finely chopped greens – parsley and dill. Cottage cheese, use a natural, homemade version – just perfect. With delicious fatty cottage cheese, the filling will turn out juicy and tender. Mix cottage cheese with herbs, salt and pepper a little. The filling is ready.
7. Roll out each ball of dough thinly, put the curd filling on one edge, 1.5 tbsp is enough. l.
8. Wrap the kutabs like pasties, cut off the excess edges and pinch.
9. Heat the pan well, put the kutab and fry on both sides for 1-2 minutes until golden brown.
10. Put the finished kutabs on a plate and immediately grease with butter to soften the dough. Thin dough quickly becomes soft.
Ready-made kutabs with greens and cottage cheese just melt in your mouth.
