Oven-baked eggplants in tomato sauce are a great winter appetizer. A big plus is that eggplant can be served as a snack, and tomato sauce can be used to prepare second courses.
The process of preparing blanks of such a plan does not require any special knowledge, so any housewife can cope with this recipe. The process takes a little time. In general, you will spend 30-40 minutes cooking the tomato and at the same time you can bake the pepper in the oven. The pasteurization process takes 20 to 40 minutes.
Ingredients:
For 2 cans (1 liter each):
- Eggplant – 4 pcs.
- Tomatoes – 2-2.5 kg.
- Carrot – 1 pc.
- Onion – 1 pc.
- Fresh dill – 1 bunch.
- Parsley – 1 bunch.
- Sugar sand – 8 tbsp. l.
- Coarse salt – 8 tbsp. l.
- Spices (turmeric, paprika, red pepper, etc.) – 3 tsp.
- 10 vegetables (spices, dried) – 3 tsp
- Garlic – 1-2 cloves.
- Water – 100 ml.
- Vinegar 9% – 2 tbsp. l.
How to cook:
1. Prepare the eggplant. Wash them under running water, dry with a towel. Place parchment paper on a baking sheet and eggplant on top. Bake eggplant at 180 degrees, periodically turning over on different sides. The process will take about 30 minutes. Ready eggplant peel and remove the tail.
2. For tomato sauce, put the washed tomatoes in any convenient container (bowl, cauldron, etc.).
3. Add peeled, washed and chopped carrots to the tomatoes.
4. Peel the onions, wash, cut in half and put in a bowl with the rest of the ingredients.
5. Add fresh herbs.
6. Pour in salt and sugar.
7. Pour spices with turmeric.
8. Add spices to 10 vegetables.
9. Peel the garlic, cut into slices and add to the bowl.
10. Put the bowl on medium heat. Pour in the water. Simmer, stirring occasionally, for about 30 minutes. After that, chop the vegetables to make a tomato sauce. Cut the eggplant into slices or do not chop, there is no difference. Transfer the eggplants to sterile jars.
11. Place the washed and chopped parsley on top of the eggplant. And pour the tomato sauce along the edge of the jar and add a tablespoon of vinegar.
12. Place the jars, without twisting the lids, in a pot of boiling water. The jars should be about 2/3 covered with water. After pasteurization (20 to 40 minutes), remove the jars and screw the lids on well.
