Salad “Delicacy” from cauliflower is very tasty. It is best to roll it into 0.5 liter jars, but this is not a fundamental condition, since 1 liter jars are also suitable. In order for the salad to perfectly “stand” all winter, it means that the jars do not explode and the lids do not swell, all the recommendations that will be described in detail below should be followed. If we say this in a nutshell, then it is imperative to sterilize the jars and the salad itself.
To prepare this salad, you should buy a good head of cauliflower. It means that it should be beautiful and light in color, but not yellow. Also, the vegetable should not have any visible black spots or rot. It is worth stewing cabbage with tomato paste, but it can be safely replaced with fresh tomatoes, if they are on sale now.
Ingredients:
- Cauliflower – 1 head.
- Garlic – 1 clove.
- Bulgarian pepper – 0.5 pcs. (you can use it more).
- Salt – 0.5 tsp.
- Sugar – 1 pinch.
- Tomato paste – 0.5 tbsp. l.
- Vegetable oil – 70 ml.
- Vinegar 9% – 1 tbsp. l.
How to cook:
1. Disassemble the cauliflower into inflorescences. The easiest way to do this is with a sharp kitchen knife. Wash it, put it in a bowl or in a saucepan.
2. Cut half of the bell pepper. Add tomato paste.
3. Now add salt and sugar.
If you wish, then you can add ground black pepper.
4. Pour in the specified amount of vegetable oil.
5. Now pour in enough water to completely cover all the cauliflower florets. Send the pot of vegetables to the fire. After the marinade boils, reduce the heat and simmer the salad for 15 minutes. Then pour vinegar into it. Stir.
6. Add a clove of garlic. Bring the salad to a boil and immediately turn off the heat.
7. Arrange the salad neatly in clean jars. Be sure to sterilize them in the microwave or oven before filling.
8. Put a rag on the bottom of the pan, install a jar of salad, fill it “up to the shoulders” with warm water and send it to the stove. When the water boils, reduce the heat and sterilize the salad for 15 minutes.
9. Now carefully remove the salad jar and seal tightly with a metal lid.
