Zucchini are ideal vegetables for harvesting for the winter. They are canned, all kinds of salads and lecho are made from them. But, these are ordinary blanks, the recipes for which, perhaps, are available in the cookbooks of every housewife. And we want to offer you an original dish – zucchini jam with dates and raisins.
Since zucchini has a neutral taste, they go well with many foods, including sweet ones. The proposed jam is a vivid confirmation of this. The main ingredient of the jam is, of course, zucchini, and young ones, without grains. They harmonize perfectly with sweet dates and raisins. From spices, cinnamon is used – ground and in the form of a stick. It is the last ingredient that gives the workpiece a delicious taste and rich color.
By changing the spices, you can change the flavor of the jam. For example, instead of cinnamon, you can use clove buds, allspice, cardamom pods, and star anise. However, you can add the above spices to the jam in any combination.
Ingredients:
- Zucchini – 600 g.
- Pitted dates – 100 g.
- Small light raisins – 100 g.
- Small dark raisins – 100 g.
- Sugar sand – 300 g.
- Ground cinnamon – 1 tsp
- Cinnamon stick – 1 pc.
How to cook:
1. Wash the zucchini thoroughly, remove the stalks. Peel the fruit from the peel.
2. Grate the zucchini on a coarse grater.
3. Place the zucchini in a jam bowl or saucepan. Add sugar.
4. Mix thoroughly and leave for 1 hour. During this time, the zucchini will give a lot of juice.
5. Add ground cinnamon. Stir. Put the pot on the fire and let the contents boil.
To prevent the jam from burning, it is advisable to substitute a flame divider under the pan.
6. Reduce the fire, put a cinnamon stick in the pan and cook the jam for 30 minutes, not forgetting to stir.
7. Put the raisins in a colander, rinse and let the water drain.
8. Cut dates into small cubes.
9. After half an hour, add raisins and dates to the pan. Mix well.
10. Continue cooking for another 15 minutes.
11. Remove the cinnamon stick and place the hot jam in sterilized jars and seal tightly.
Zucchini jam with dates and raisins is ready. You can serve this unusual delicacy on cold winter evenings spread on fresh white bread with a cup of aromatic tea or coffee.
