A festive fish dish that can be prepared in portions for each guest. Today we offer one of the options for cooking fish royally. We will use mackerel as a basis. You can take zander, pike, carp.

Ingredients:

  • Large mackerel – 1 pc.
  • Dried mushrooms – 0.5 tbsp.
  • Garlic cloves – 2 pcs.
  • Onion – 2 pcs.
  • Carrots – 2 pcs.
  • Pickled patissons or cucumbers – to taste.
  • Sour cream or mayonnaise – 50 ml.
  • Mozzarella cheese – 120 g.
  • Mozzarella cheese – 2.5 tsp
  • Spices – to taste.
  • Vegetable oil for frying – 3 tbsp. l.
  • Vegetable oil for frying – 300 g.
  • Fresh herbs – for serving the finished dish.

How to cook:

1. Prepare the stuffing for the fish. First, pour dry mushrooms with boiled hot water in a bowl and leave for 20 minutes. Mushrooms for this will get wet and slightly increase in volume. Then rinse the mushrooms with water to remove any remaining sand, if any.

Instead of dry mushrooms, you can take fresh champignons for this dish, they are just not as fragrant as forest mushrooms.

Finely chop the peeled onions and carrots for the filling.

2. Heat vegetable oil in a frying pan or in a saucepan, squeeze a few cloves of garlic. As soon as the garlic warms up, send the chopped mushrooms and fry for 10 minutes, over low heat under the lid. Add carrots and onions to mushrooms and cook together for another 5 minutes. Now salt and pepper the vegetables and mushrooms to taste.

If desired, other vegetables can be included in the filling. You can put sweet peppers, green beans, tomatoes, zucchini. In this case, the cutting of all components must be done in the same size so that the filling is one whole.

3. Pour the finished filling into a clean bowl or plate. Finely chop pickled squash or cucumbers and add to the filling, mix. Add a little sour cream or mayonnaise, some grated cheese to the filling.

4. Prepare fish for baking. Take the carcass of a large mackerel, remove the gills and cut the fish carefully from the top along the ridge. Remove the innards and cut out the bone ridge. Wipe the inside of the fish with a paper towel, salt lightly.

5. Turn on the oven to 190 degrees. Line a baking sheet with parchment or foil, place the fish on top and brush the sides with vegetable oil. Fill the fish with prepared stuffing.

6. Sprinkle plenty of grated cheese on top of the fish. On the sides of the mackerel, you can put small potatoes for a future side dish and so that the fish with the filling does not open too much and keeps its shape.

7. Bake the fish in the oven for 20 minutes or more, checking as you cook.

8. Serve the finished fish royally warm with potatoes or with another side dish of your choice. By the way, you can decorate fish with black olives by making eyes out of them.
