If you want to surprise invited guests at the holiday, then you should definitely prepare such a beautiful, bright Hedgehog salad. In addition to its unique appearance, it also has an impeccable taste. If your child has a birthday, then do not hesitate, such a salad will cause a sensation among the kids. The only thing is to slightly change its composition, be sure to replace the mushrooms, instead of them, for example, add fresh or pickled cucumber to the salad, and instead of mayonnaise, season it with sour cream.
It is best to serve ready-made salad “Hedgehog” to the table after it has stood in the refrigerator and is well soaked. By the way, you can also add pickled onions to it, of course, if you love it at all.
- Mushrooms (any) – 2 pcs.
- Egg – 2 pcs.
- Fresh carrots (you can buy Korean-style carrots immediately) – 1 pc.
- Chicken breast – 100 g.
- Prunes – for decoration.
- Salt – 1 pinch.
- Pepper – 1 pinch.
- Vegetable oil – 1 tbsp. l.
- Mayonnaise – 2-3 tbsp. l.
How to cook:
1. First of all, wash the mushrooms very thoroughly, chop them and fry until soft in a pan, pouring vegetable oil into it.
2. Boil boiled chicken eggs. To make them hard-boiled, cook them for at least 7 minutes from the moment the water boils completely. Then peel them and grate them on a fine grater, be sure to separate the whites from the yolks.
3. Grate carrots on a special grater. Add salt and pepper. Mix well.
4. Tear boiled meat into small pieces.
If your meat is raw, then pre-bake it in the oven for 40-50 minutes or boil it in water (30 minutes will be enough).
5. Put the chopped chicken meat on the dish with the first layer. Lubricate each layer with mayonnaise.
6. Send grated chicken yolks on top of the meat.
7. They have fried mushrooms.
8. Then proteins. Spread this layer generously with mayonnaise.
9. Now lay out the carrots as in the photo.
10. Make black eyes and a hedgehog nose out of prunes or olives. Mayonnaise make pupils. Finish off with fresh parsley leaves.
